My 8 year old is on the energy ball bandwagon. She asks me every week if we can make them and always wants to create her own recipe.

So this week she did! I laid out all the ingredients we had in the house and she could pick and choose what she wanted in them (side note: candy was not an option to put in them!).  After she chose her ingredients, I asked her “Why she picked them.”  Here was her response:

“Peanut butter for protein

Flax for omegas

Coconut and chocolate for taste

Oats because I love oatmeal

Honey and coconut oil because it’s the glue to stick it together better”

 

I LOVE that she listens to me when we bake together and is understanding the importance of healthy/ mindful eating.  This is our go to snack when we are out exploring nature or going on bike rides.  They are easy to pack along is any container.  They also freeze really well, which is a great trick to do so you’re not eating 20 of them at a time if they’re in your fridge!

 

Avery’s Coconut Peanut Butter Energy Balls

INGREDIENTS

1 cup dry oatmeal

1 cup coconut

3/4 cup peanut butter (or any nut or nut-free butter)

1/2 cup flax seed

1/4 cup melted coconut oil

1/4-1/3 cup honey

1 tsp pure vanilla extract

1/4 cup chocolate chips

DIRECTIONS:

Mix all of the ingredients together.

Chill for about 10 minutes.

Roll into balls (any size you want)

Put in the fridge or freeze them (freeze individually on a cookie sheet before you put in them in a container in the freezer so they don’t stick together)
