I am starting to love meal prepping and having healthy food ready to eat in my fridge.  I’m not using the excuse that I don’t have time to make something healthy because of my busy schedule anymore.

I’m trying to find simple, yet delicious food to have on hand that is versatile so I can add it to other foods and create new meals every day.

This week is all about Black Bean Salsa.

If you would have asked me a year ago if I would have eaten it, I would have laughed and said no.  The texture of beans grossed me out.  I don’t know what has changed, but I add more lentil and beans in my meal plans.  It’s just another way to add protein, along with other nutrients in your day.

 

BLACK BEAN SALSA

 

INGREDIENTS

1 can of black beans drained and rinsed

1 can of corn drained and rinsed

20 cherry tomatoes diced

1 red or yellow pepper diced

1/2 red onion diced

1 lime juiced

Salt and pepper to taste

1 tsp of Cumin

1/4 tsp ginger

1 tsp garlic powder

1/2 tsp celery salt

2 tsp chopped up dill (optional)

Drizzle of olive oil

 

DIRECTIONS

Add all the ingredients together.  Let sit for at least 2 hours in the fridge and let the spices and ingredients combine.  If you like to add more spice, you can add some chopped jalapenos.

Serve with home made pita chips, nachos, tortillas or in a salad.
